Cranberry Apple Hand Pies

Impress your pals with these adorable little hand pies. Go on, have two! We won’t tell.

Ingredients:
1 c fresh cranberries
1 c apples, chopped
1 ½ c white sugar
½ c brown sugar
2 tsp cinnamon
2 tbsp cornstarch
pre-made pie crust
1 egg white

What To Do:
Preheat oven to 350 degrees.

In a saucepan, simmer chopped apples and cranberries with both the white and brown sugar as well as the cinnamon. Add a splash of water if needed to help the apples steam out.

As liquid starts to form, strain some out and put into a bowl. Whisk in cornstarch one tablespoon at a time to create a slurry. Mix that back into the apple mixture in the saucepan.

Cut pie crust into large circles, about 3” diameter and arrange on a cookie sheet lined with parchment paper or a Silpat.

Using a slotted spoon, place spoonfuls of the apple-cranberry mixture in the center of the crust rounds. Fold them over and press edges with a fork.

At this point you can brush an egg white on the crust to give it a shiny finish and sprinkle with some cinnamon sugar.

Bake for 20-30 minutes or until golden brown.
